Cheesy Veggies Tiffin Rolls

📝Ingredients 


🥄For the filling:

• 1/4 cup grated carrot

• 1/2 cup grated paneer (or tofu)

• 1/4 cup grated cheese

• 1/4 cup chopped capsicum

• 2 tbsp boiled sweet corn

• 1/4 tsp black pepper

• 1/4 tsp chaat masala or mixed herbs

• Salt to taste

🌯For the wrap:

• 1 cup whole wheat flour (for making rotis)

• Water as needed

• Ghee or oil for roasting

👩‍🍳 Instructions:

1. Prepare dough:

Knead the wheat flour with water into a soft dough. Rest it for 10 minutes.

2. Make filling:

In a bowl, mix paneer, cheese, all veggies, and spices. Combine well.

3. Roll rotis:

Make thin rotis from the dough and roast lightly on a tawa. Don't overcook – keep them soft.

4. Fill and roll:

Spread the veggie-cheese mixture inside each roti and roll them tightly. You can toast the rolls lightly with ghee for crispiness.

5. Pack and serve:

Cut them in halves or keep whole. Wrap in foil or butter paper and pack for tiffin.

💡 Tips:

• Add a little mayonnaise or ketchup inside for extra taste.

• You can also add boiled potatoes or beetroot for variation.

• To make it spicier, add chopped green chilies or chili flakes.
