There's something magical about Sunday and the aroma of chicken biryani filling the home. Here's my personal favorite biryani recipe - full of flavour, love, and Sunday vibes!
📝 Ingredients:
🧂For Marination:
• 500g chicken (bone-in preferred)
• 1 cup curd(yogurt)
• 1 tbsp ginger-garlic paste
• 1 tsp red chilli powder
• 1/2 tsp garam masala
• Salt to taste
• Juice of 1/2 lemon
• Fresh coriander and mint leaves (chopped)
🍚 For Rice:
• 2 cups basmati rice (soaked 30 minutes)
• 4 cups water
• Salt to taste
🍲 For Biryani Masala:
• 2 large onions (thinly sliced)
• 2 tomatoes (chopped)
• 1 tsp biryani masala (optional)
• A few saffron strands soaked in 2 tbsp warm milk
• Ghee or oil ( 3-4 tbsp)
🧑🍳Method:
✅ Step 1: Marinate the Chicken
Mix all marination ingredients and coat the chicken well. Cover and let it rest for 1 hour (or overnight for best taste).
✅ Step 2: Cook the Rice
Boil water with whole spices and salt. Add soaked rice and cook till 80% done. Drain and keep aside.
✅ Step 3: Fry the Onions
In a deep pen, heat ghee/oil. Fry sliced onions till golden brown and crispy. Remove half for garnish.
✅ Step 4: Cook Chicken Masala
In the same pen, add tomatoes, cook till soft. Add marinated chicken and cook until chicken is tender and masala thickens.
✅ Step 5: Layering Biryani
Lower the flame. Layer rice over chicken. Sprinkle saffron milk, fried onions, mint, and coriander.
✅ Step 6: Dum Cooking
Seal the lid with dough or a tight lid. Cook on low heat for 20-25 minutes. Let it rest for 10 minutes.
🍽️ Serve With:
• Chilled raita
• Onion salad
• Chatni
